The ripe Highland Agaves were roasted in brick ovens and crushed with a screw mill. They were fermented with bagasso (agave fibers) in pine vats with ambient native yeasts. They were distilled with the bagasso in copper pot stills. Bottled at 46%. It is stunning. It reminds me of how a lot of Tequila used to taste in the 90's before mono-culture and corporate ownership diluted the quality of the category. It has a complex flavor profile with citrus rind, fresh roasted agave, black pepper, and mineral notes. The high proof is evident on the front palate but mellows nicely on the finish. Located in the Valles Centrales region, it is one of the larger Mezcal producing areas in the state and is where the second Artisanal Mezcal ever exported to the US came from with Del Maguey's San Luis del Rio Single Village expression. Maestro Balthazar Cruz Lopez pit roasts the agaves in an earthen oven and mills them with a mule drawn tahona. The mash is fermented with ambient yeasts in cypress tanks and double distilled in copper alembic stills.\u003c\/p\u003e\n\u003cp\u003eThis is an \"old\" Mezcal in the sense that it was distilled back in October of 2016, rested in glass demijohns for over 2 years prior to bottling, and then further \"aged\" in bottle up to the present day. Glass aging doesn't have anywhere near the effect of barrel aging as there is little to no oxidation and glass is an inert material, unlike the charred wood in a barrel. But glass does allow the liquid inside to harmonize and mellow over time. Their goal was to fairly compensate the producers for their work in hopes of preserving the traditional methods of production in their respective communities. This Coyote is a rare local hybrid that is now cultivated on their family land. Capòn is the process of cutting the sprouting seed stalk when the plant is at full maturity, and leaving the agave in the ground for a further 6-12 months for additional \"aging\" in the field. \u003c\/p\u003e\n\u003cp\u003eThe fully mature Capòn agaves were roasted in an earthen pit for 3 days and mashed with machetes and a mechanical shredder that is similar to a wood chipper. The agaves were co-fermented with rain water (the label has a misprint that says well water) and native, ambient yeasts in Montezuma cypress wood tanks. It was double distilled in copper pots and adjusted with puntas y colas, or the heads and tails of the distillation. \u003c\/p\u003e\n\u003cp\u003eOn the nose, there are notes of tamarind, roasty agave and marigolds. A truly inviting and delightful aroma. On the palate, it is complex and moreish with flavors of sweetcorn, a soft acidity, and a character that we can only describe as \"Miahuateco\" or expressive of the Mezcales from this area of the Miahuatlan region. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAbout NETA Spirits:\u003cbr\u003e\u003c\/strong\u003e\u003cem\u003e\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003eWe have always felt a special connection to NETA because we were the first bar to ever purchase and pour their spirits way back in 2012. When talking about \"single batches\" we are referring to lots produced from a single oven or harvest of agave. The process of crafting these batches begins with the harvest of mature\u003cspan\u003e \u003c\/span\u003een guía\u003cspan\u003e \u003c\/span\u003eor\u003cspan\u003e \u003c\/span\u003ecapón\u003cspan\u003e \u003c\/span\u003eplants, often of various species or types of agave around the time of the full moon, that are then cooked together in a conical earthen pit. They are cultivated in the steep and verdant lands of the southern Sierra Madre mountains. Don Carlos pit roasts his agaves in a deep earthen oven for just 36 hours with oak and encino wood. He crushes the agaves in a mechanical chipper and ferments the mash with ambient yeasts in earthen pits. He double distills on a copper and stainless steel alembic pot still. They harvest only 10% of the mature wild agaves on their property each year, leaving the remaining 90% to go to seed. We had the great fortune of visiting them at their Vinata on their 8000 acre cattle ranch in the Zona del Silencio of Durango, Mexico back in December of 2025. All of their agaves are wild grown and only 10% of the mature plants are harvested each year, leaving the remainder to go to seed. This benefits the plant genetics and is vital for natural pollinators like birds and bats. Wild agave Cenizo are \"Capado by Cows, Deer \u0026amp; Cowboys\" or essentially castrated at the flowering stage and left in the ground for up to 1 year. The sugars are concentrated in the Piña or heart of the agave over that time and secondary flavors emerge once it's fermented and distilled.\u003c\/p\u003e\n\u003cp\u003eThe agave are pit roasted, ground with a stone tahona, fermented in wooden vats, and double distilled in copper pots. The regular expression of their Cenizo is one of our favorite bottles. This is a very special 18 bottle batch that was \"aged\" in a Dama Juana (blown glass demijohn) from February of 2022 until it was bottled in February of 2026. While the glass doesn't impart flavor or color (like an oak barrel would, for example), it does allow the spirit to soften and its flavors become more harmonious. On the nose, we get an unexpected aroma of ume plum and raisiny fruit. The well integrated, ashy smoke appears on the next nosing. On the palate it is soft and plush with some overripe fruit muskiness, faint smoke, some herbal notes, and a long and satisfying finish.
